The Palacios brand from the Rioja region of Spain. This Chorizo is finally making it in larger quantities into the United States. These simple yet wonderful sausages, made from ground pork shoulder, paprika, garlic, salt and a tad of sherry. The sausages marinate for 24 hours and then put into casings and hand tied. From here the sausages move to the smoke house, where they smoke for a period of 2 to 16 weeks. They smoke over an oak wood which is set in a barrel.
The flavor of this chorizo is incredible, nice smoky, spicy and slightly sweet.
