Sherry (Jerez in Spanish) is produced within the geographical triangle formed by the towns of Jerez de la Frontera, Sanlucar de Barameda and Puerta Santa Maria. This delimited area borders the Atlantic Ocean and receives a great deal of sunshine along with cooling breezes from the sea. Using the Palomino grape variety traditional winemakers make a dry, aromatic white wine that is justly famous around the world. (Sometimes Sherries are fortified with alcohol or sweetened for export.) Videsan is a family owned business with over four generations of experience dedicated to the crafting of oak barrels, Sherry wine making and the careful aging of Sherry wines and Sherry wine vinegars. Since 1970 the Monge family has focused 100% of their efforts on producing and aging Sherry wine vinegars within the Denomination of Origin "Vinagres de Jerez." Videsan starts by selecting the finest batches of Sherry wines with the specific intention of making vinegar. Age, color, aroma and acidity are all closing considered. Wines selected are then acetified and placed into a solera aging system within the family's own cellars. A solera aging system is the traditional aging method in Jerez, and is similar to the traditional method of aging aceto balsamico traditionale in Modena. In a solera aging system normally around one third of the oldest vinegar is taken out of the system from the last barrel for bottling and the barrel is refilled with one third of the next oldest which is in turn refilled with one third of the 2nd to next oldest which is then refilled with one third of the 3rd oldest etc. This can go on forever (almost) depending on the age and size of the solera. The process continues with the newest barrel being "topped off" with new vinegar. The age of the vinegar drawn off for bottling depends on the age of the oldest barrel in the line. Solera 77 Special Reserve Sherry Vinegar is a unique and special product with 8% acetic acid made from select Palomino Fino wines. It produced in very limited quantities, and is taken from one of the oldest solera aging systems in Jerez. The solera system limits production to 6000 liters per year, and some of this vinegar can be traced back through 50 years of solera aging, making the "Special Reserve" one of the oldest vinegars in the world. It is packed in a rustic 250ml bottle, cork topped and sealed with lacquer. The bottle and additional cork are decoratively wrapped in gold cellophane.
