There are two D.O.´s for cheese in Murcia: Queso de Murcia and Queso de Murcia al Vino. All of the cheese produced in the region is produced with goat milk. Queso de Murcia is cylindrical in shape. It is bright white in color and has a shiny texture. It´s taste is fresh, sweet, slightly salty, and creamy. It is somewhat pasty when chewed, which is attributed to its high quality. Queso de Murcia al Vino is also cylindrical in shape. It is an aged cheese, with a smooth, slightly acidic and salty, very creamy and buttery flavor. The cheese is covered with wine during the aging process to give it its color and add a slight aroma of wine. |
