ROASTED PEPPERS are peppers than are burned over an open flame until the skin is charred and blistered. This method imparts a smokey flavor to the peppers and at the same time cooks them. The charred skin is peeled by hand and the pepper is seeded and cut into strips. Preserved in oil or a marinade mix that often includes garlic.
