From the French Pyrenees, this popular, firm, wax-covered, washed-rind cheese has the sugary, sweet flavor for which sheep milk is renowned. Its smooth texture is perfect for shaving or cubing. It has a beautiful basket-weave casing and displays well on cheese platters. Will last months. For wine recommendations, fruit is the key.
