The Auvergne has five of the 40 AOC approved cheeses in France. More than any other region in France. The five are:- Cantal, St.Nectaire, Bleu d'Auvergne, Fourme d'Ambert and Salers. This ST NECTAIRE takes its name from Sainte Nectaire, a small mountain village named for the 17th century leading family, Sennecterre. Made from pasteurized cow's milk and traditional rennet, the cheese is mild and fruity with a soft, meaty texture with occasional tiny eyes and is covered with a reddish natural rind.
